No. Either use the symbol and indicate which character set encoding you are using (e.g. character 169 in ISO-8859-1), or use the prescribed abbreviation "copr.". Software shouldn't guess what character I may have meant. Microsoft Word already has this misfeature of replacing (C) with the c-in-a-circle symbol. It's most annoying, especially when you have to refer to, say, article 52(c) or item (3)(c).
