I would personally recommend a small (100-200MB) partition for /boot (typically using ext3) and the rest should be a single large LVM partition. Then I'd create a single LVM volume (you can make it just 10GB or 20GB large) for / plus a second LVM volume for swap (maybe 1GB). The leftover space can be used at any point later (without reboot) either by extending the existing volume or by creating a new volume. If you go the LVM route, you'll be able to change you mind later on easily.
