For learning purphose I would advice LinuxFromScratch instead of Gentoo...
However, for a learneable distribution that could be upgraded with less
hassle than LFS, then gentoo may be your choice..
I think it's all about how much time you have to spend with it, and if you
care to know things deep enough...
