Incus 6.10 has enabled VirtIO IOMMU on all its virtual machines with the
next LTS point release expect to pick up this change (6.0.4 which is
aimed to be the release version for trixie).

Unfortunately the Debian kernel currently doesn't have
CONFIG_VIRTIO_IOMMU enabled, so the guest VMs don't get to benefit from
IOMMU being enabled.

It would be great if this config could be enabled in both the amd64 and
arm64 kernels as those are the architectures where virtio_iommu appears
to be functional and where we have it enabled in Incus.
