Da man startx:
The startx script is a front end to xinit that provides a
somewhat nicer user interface for running a single session of
the X Window System. It is often run with no arguments.
Direi che il metodo più ortodosso per "tirar giù l'interfaccia grafica"
è (se usi gnome, ad esempio) Azioni -> Esci.
Se per qualche motivo non funzionasse, la sequenza CTRL+ALT+BACKSPACE è
un metodo un pò più violento per raggiungere l'obbiettivo. :-)
Se invece usi un Display Manager (gdm, kdm) basta un bel
/etc/init.d/nome_display_manager stop
da root.
