Hi, Well... you could either simply get the source directly from apache's website www.apache.org, or if you have deb-src entries in your apt.conf, you could pull the source from there, and then simply compile suexec with your own settings.
Its a REAL pain in the ass, but so far I haven't found any runtime settings that we can allow you to change the directory. It would be GREAT if suexec would read in what directories are allowed from /etc/apache/suexec.conf, for example, but oh well.
