Usually it's quite safe, as long as you don't make too radical changes.
Things too look out for.
- Kernels optimized for some CPU might not work on others, so a P3 kernel
won't work on AMD systems... (Just make a generic 386 or Pentium kernel)
- Switching from SCSI to IDE or having changes in types of cards
- Framebuffer support for (on-board) video
- Network drivers for (on-board) ethernet
