Software with sane build systems can be tested using "CC=gcc-11 CXX=g++-11 CPP=cpp-11" but sanity is not as widespread as one would hope. Also, such packages make testing that involves sbuild much easier. Thus: please upload gcc-11 defaults to experimental.
