For user selection in menus: Add an additional "Skolelinux" menu item containing the major 10-20 preferred applications. For automatic selection when double-clicking a document: Make a script that runs through /etc/alternatives and various MIME databases to prefer a list of applications over other choices. Sure, it's a hack.
