I agree with your implication that arbitrary information of that kind
doesn't belong in ‘debian/copyright’.

I see two reasonable options: don't put it in at all, or put it in a
separate file under ‘/usr/share/doc/$PACKAGENAME/’ with a filename that
makes sense.
