You also need to downgrade packages back to unstable when the build needed some package from experimental. So you should pin to >1000 and run apt-get dist-upgrade between builds as a minimum. Or just throw away the chroot, unpack a new one, upgrade to sid, add experimental to sources.list, run sbuild for every build. Much safer and simpler.
