I would opt for a) personally. Exim has done me well for years, and exim-config (or its debconf-based replacement) is great. However, if b) is chosen ... doesn't this cry for a category, not a task? Or perhaps even a one-off frontend that lets one select from the list of 'grep-available -FProvides -sPackage mail-transport-agent'?
