Hello Nik,
to boot and install debian with standard GUI and standard tools you only
need the first DVD:
debian-8.8.0-amd64-DVD-1.iso
<http://cdimage.debian.org/debian-cd/current/amd64/iso-dvd/debian-8.8.0-amd64-DVD-1.iso>
The installer then loads all other necessary data that is not contained
in this ISO file over the Internet.
You need the two other DVDs only if you want to use programs that are
not included on the first DVD _and_ if you have no Internet connection
during the installation.
