I wholly expect that people will want to install third-party firefox packages, maybe even alongside the iceweasel package, and having this symlink in place is going to make that harder. Can iceweasel be modified to look for extensions in /usr/lib/firefox in addition to /usr/lib/iceweasel, so that it gets all the benefits of any untransitioned extensions?
