Based on your backtrace, I can reproduce this from a working state by
selecting the "Details -> Overview" panel. The current panel is saved
before it crashes, so the broken state becomes permanent, until/unless
you use this workaround:
gsettings reset org.gnome.ControlCenter last-panel
or do the equivalent in dconf-editor.
Assuming this didn't happen in buster, it might be a regression or
behaviour change in recent uploads of udisks2 or glib2.0.
