You can either try to backport PHP portion of 3.7.0-alpha0 to 3.6.2[*],
or check with upstream if they can finish 3.7.0 before stretch freeze
and if they can make it package 3.7.0-alpha0 right away.

* - or ask upstream to include this update in 3.6.X
