The reason for the failed build that the ffmpeg package no longer provides the optional and deprecated VHOOK extensions, but provides instead libavfilter, a new library for implementiong various filters. I have no idea how essential VHOOK is for ffmpeg2theora, but as peter points out, it seems that newer versions as the one in ubuntu does no longer require it.
