I've just discovered another weird thing: With Evolution, I can access my e-mails on the Exchange server but I cannot access the calendar on the Exchange server.
In Edit > Plugins there is a "Exchange Operations" plugin that can be enabled or disabled. By default it is disabled. If I try to enable it by checking "Enabled", an clicking "Configure", it is enabled. Then I quit Evolution, but when I restart Evolution, it is disabled !
