This was fixed (or at least worked around) in the Ubuntu package some time ago:
grub2 (1.98~20100128-1ubuntu3) lucid; urgency=low
* Stop forcing gfxpayload=keep when CONFIG_FB_EFI=y, which it always
is on
Ubuntu kernels; this apparently causes trouble with some KMS
framebuffers.
