I just tested a domU and dom0 kernel package created with the patch
above (from the Xen patched kernel sources), it appears the postinst
script is looking for the /boot/vmlinuz-* kernel [1], which is not
created (see notes above, only xenu-linux-* / xen0-linux-* images are
included in the package), so this will have to be changed, too. Also,
the packages are called linux-image-*.deb instead of linux-xenu-*.deb,
as they were used to be, IIRC. So, there are still some changes to be
done. (Note: an unpatched kernel with Xen virtualization enabled can be
installed without any problems.)

The dpkg error message for the patched kernel:

Setting up linux-image-2.6.26-lenny.2.6.26-amun.audio.0 (0.1) ...
Internal Error: Could not find image
(/boot/vmlinuz-2.6.26-lenny.2.6.26-amun.audio.0)
dpkg: error processing linux-image-2.6.26-lenny.2.6.26-amun.audio.0
(--configure):
subprocess post-installation script returned error exit status 2

Files in /boot:

config-2.6.26-lenny.2.6.26-amun.audio.0
System.map-2.6.26-lenny.2.6.26-amun.audio.0
xenu-linux-2.6.26-lenny.2.6.26-amun.audio.0
