It told me nothing was removed because docvert-openoffice is not installed!
(I suspect that my moving the rc2.d link from S20.. to K80.. might have
confused matters.)

With the earlier version 'diff docvert-converter docvert-openoffice'
returned no differences; this time it returned significant differences.  So,
I've removed all references to docvert-openoffice, and moved
K80docvert-converter back to S20....  I can't reboot right this minute, as
I'm in the middle of something, but I'll do it later this evening and let
you know; I'm fairly confident that all will be well!
