gv indeed lacks an way to directly zoom to a specified magnification.
(There is also a wishlist open in upstream's tracker about that).

The GUI is not limiting to 10x, but is limiting to zooming to configured
options. See (State -> Setup Options). Just add another scale there
(first field is description you see in the menu, second is the actual
scale) and you can select it.
Note that it also possible to save this into a ~/.gv file (though
loading this does not work in etch) or in your ~/.Xresources (which is
not used sarge).

This does not set the scale to 1, but selects scale 1, which is one
scale more than the default (i.e. 1.44 in the default configuration).
I'll guess it is white because it either takes much longer due to
magnification or because the slower visible part is only white.
