first i'm a bit surprised why you would need to do that,
initramfs-tools boots just fine with
root=/dev/disk/by-label/root
but even than that is quite easily done with some shell expansion,
see this example on uuid, label should be similar.
root=$(/usr/lib/klibc/bin/readlink
/dev/disk/by-uuid/225ee24e-8451-4f75-b444-9683c3403a99)
echo realroot="/dev/${root#../../}"
realroot=/dev/sda1
well if there is a real usecase i'd might hack an canocalise
in readlink from klibc-utils or accept a patch.
at the moment i'm a bit sceptic.. :)
