Bug#1108419: Taking up ITP again + status of python-markdownify

Hi,

I'm taking over the ITP as I'm working with Arian Ott on getting Alpaca into 
Debian. Python-markdownify, a dependency of markitdown has successfully made it 
to unstable. We only need to package magika and markitdown to finish all of the 
dependencies for alpaca.
