You can undo the effect of

    gsettings set org.gnome.calculator refresh-interval 0

with

    gsettings reset org.gnome.calculator refresh-interval

which will reset that setting to its default value, so that it will automatically follow the default if the default changes.

Or use menu → Preferences → Exchange Rate Refresh Interval in the app, and set it according to your preference.

The only reason for the workaround to be specified as a gsettings command to run, rather than something to do in the app, is that you can't do anything in the app if it has already frozen.
