After giving it a little more thought I remembered that we will have /etc/default/mpd in the 0.12 packages so it really wouldn't be a problem to stick it in there. Have to check for START_MPD in the postinst anyway. So, if you can wait, I'll just close this when that's finished. (Working svn snapshots may take another couple days to go up; I'm fighting with the build system as we speak and then I gotta go get an account on musicpd.org.) -- things change.
