Since the switch to Xft font, a part of the man page became obsolete:
-font font
(-fn is equivalent.) [X resource: xpdf*fontList]
This no longer affects the interface (except the zoom menu:
see bug 996830). The new way of setting fonts for the interface
(via options and/or X resources) should be documented.
