I don't disagree with your decision, just trying to understand.

Dunno if it's a good idea to perform this change now for bullseye,
while we're in a freeze. To me this does not look right, maybe next
debian release (and backports, ofcourse) will do.

BTW, your patch is incomplete, - before enabling jack in audio-drv-list,
you have to add libjack-dev to Build-Depends. I'll take care of that.
