php-monolog as available in unstable/testing is not compatible with PHP 8. Version 1 will not add PHP 8.0 compatibility, upstream expect people to upgrade to php-monolog 2 in order to get PHP 8.0 compatibility. php-monolog 2 is available in experimental (for a while), yet symfony 4 currently in unstable/testing is not compatible with php-monolog 2. symfony 5, as available (and broken) in experimental, is compatible with php-monolog 2 but is not expected to be ready for Bullseye (LTS is expected to be published in roughly a year from now).
