I would like 'see foo.pdf' to open evince (for all users).
I guess mailcap.order(5) is the right place to give evince priority
over other pdf readers. Unfortunately that does not work: I added
the line
evince:application/pdf
FWIW, you should be able to make it work by using the name of the
deskop file:
org.gnome.Evince:application/pdf
Admittedly this is neither intuitive nor (AFAIK) documented anywhere.
