The dual setup works with very little effort from our side, so I wouldn't do that just yet. I've verified that setting 'daemonize' to 'false' and using --background for start-stop-daemon work just fine (no need to --make-pidfile and --remove-pidfile as prosody takes care about the pidfile itself).
