So there is not why to go back ?
No. The change was made because a lot of people were confused about changes to the way paths were presented in wheezy, which led to unexpected outcomes in a number of situations. The current solution at least has an understandable algorithm which lets people predict what df will show, and which will hopefully remain consistent going forward.
Also, based on your details, I'm not sure that the coreutils change has anything to do with your issue anyway. Something else in the stack seems to be mounting the filesystem as dm-0 rather than /dev/mapper/vg1-root, so regardless of the algorithm df is using to select path names, the one you want isn't even one of the candidates. I'd suspect that it's something in the code to select the root by filesystem uuid rather than path, but may be something else in mount and/or systemd.
