It is not (currently) possible to boot Xen via a bootloader on UEFI, instead you must launch the xen.efi binary from the UEFI shell (or use BIOS compat mode). http://xenbits.xenproject.org/docs/unstable/misc/efi.html describes the config file syntax which this method requires. Work is ongoing to make booting from grub work in Xen upstream, but not in time for Jessie I don't think. Hopefully for Jessie+1.
