AFAICT (both from trying this and from reviewing the source), this should only be a problem if you keep any *Dictionary* buffers open. As soon as you close the last one (by pressing "q", for instance), Emacs will close the connection to the original dictionary server; the next dictionary command will then open a fresh connection to the newly specified server. That behavior strikes me as fairly reasonable, so I'm inclined to leave it as is, particularly given that I will be adding support for customizing dictionary server settings at startup.
