I tried to boot the installer (from the RamDisk option in BootX) after
placing the 2.6 initrd.gz and vmlinux files in the "Linux Kernels"
folder on the Mac side and got the following error:

umount: /initrd: Invalid argument
cp: unable to link '/mnt/usr/share/discover/usb.lst': Operation not Permitted
cp: unable to link to '/mnt/var/log/messages': Operation not Permitted
Kernel panic: Attempted to kill init!
<0> Rebooting in 180 seconds

The installer boots fine using the 2.4.25 initrd.gz and vmlinux files

This was fixed ages ago in busybox-cvs in unstable. It's a known issue
in the current sarge_d-i images which will be fixed as a natural
consequence of snapshotting unstable again for release.
