Hi, I'm afraid I cannot reproduce this bug. With kbd-chooser, you should be able to choose the keymap manually with DEBCONF_PRIORITY <= medium. I am able to do so on i386, at least.
Can you check if this is a mac-specific bug? Have a look in the logs (console #4, or if possible copy /var/log/messages and send it to me), and see if it is checking subarches correctly. I don't have a mac to check, and the only reason offhand I can see this breaking is if the subarch detection code is not working.
