This is because you use an ISO-8859-1 based language...:-)

Just try "linux debian-installer/framebuffer=false", pick up
chinese/russian/czech/polish/arabic.....as language as look at the
result..:-)

(indeed ; just look at the first screen, this should be enough)

Of course, your other suggestions are a good idea, imho. We probably
need to better document "special" boot options.
