I've discovered that this is because the generated fstab has UUID entries in, which upsets the cryptroot initramfs hook. Obviously this codepath has never been tested. http://bugs.debian.org/cgi-bin/bugreport.cgi?bug=522041 is the relevant bug and has a patch.
