Well, Debian mostly uses the upstream software, it avoids patching over them, and instead send improvements upstream. What Debian does, however, is trying to integrate things as much as possible, such as enabling accessibility by default. I believe the issues you are having are general to Linux, yes. By "Huge fonts" and "Huge dpi", I guess you mean that the desktop behaves badly when using huge fonts or huge dpi ? I'm afraid that is to be expected unfortunately, and instead a screen magnifier such as compiz should be used.
