I would test that, only I always have to disable keyboard and MIDI ACIA handshake line toggles. I know - there are adapters to convert the narrow IDE to the regular cable; there also should be narrow cables with more than one connector. With two adapters (male, narrow > female; male > female, narrow) and a regular cable you should be able to pull this off. ISTR people did attach an IDE CD-ROM to a Falcon before.
