Hi, yesterday I had to promise to publish the recipe for the elder flower liquor I prepared at home and served yesterday. I've got the recipe from the German page
http://www.chefkoch.de/rezepte/269951103727949/Erfrischender-Holunderbluetenlikoer.html and here comes my translation: Refreshing liquor of elder flowers Ingredients =========== 35 flowers of elder flower umbels (fully bursted into bloom) 3 litre water 50 g citric acid (powder) 1 kg sugar 3 Bottles of spirit (I used so called "Doppelkorn" see at http://en.wikipedia.org/wiki/Korn_(liquor) with 38%) Preparation =========== Harvest the elder flowers after a period of nice weather at noon to ensure best flavour. Shake them a bit to get rid of any bugs (well, really living bugs not in software ;-)) because by washing with water some flavour will be lost. Use a large pot or bucket an put elder flowers, water and citric acid into it. Leave it alone for 24 hours. (Hint: You might put some peals of organically grown oranges or lemons into it as well.) After this period you put the stuff through a sieve - we also use a sheet or filter bag for coffee as second filtering step to get a really clear liquid. Put sugar and spirit to the liquid and stir it up. Then you fill the liquor into bottles (keep the spirit bottles for this reason and find some additional ones). You can safely store the bottles in the cellar for one year - but I assure you that it will not last that long until all your bottles are empty before this period if you stick to the amounts given above. (This year we used 1.5 times of the stuff). The liquor can be consumed immediately without any additional waiting.
