The 2.1.x is a technology preview. Don't run it unless your ready to deal with problems.
Downgrading to 2.0.6 is not a problem. The new tables simply won't be used. Could be there's a problem with the CRLF conversion that is ignored by thunderbird, but makes OE go bezerk.
