the excellent book "Science for the Curious Photographer An Introduction
to the Science of Photography" by Charles Johnson, Jr. also contains
some chapters on human vision and color. The discussion also covers some
mathematical aspects of color but remains mainly on a qualitative level.

If you want to go into more details, "Handbook of Image Processing and
Computer Vision Volume 1: From Energy to Image" by Arcangelo Distante
and Cosimo Distante might be a good addition to Johnson's book. See
