Yes, I agree. I'm programming Java and have installed two Java-JDK versions (oracle java-8 and openjdk java-11). I use them to check my software against them for java-8 / -11 compatibility. My JAVA-HOME is not predefined for bash. Running the darktable build process I find JAVA_HOME pointing to java-8 JRE. This is the reason for the second issue (java.lang.NoSuchMethodError: java.nio.CharBuffer.limit(I)Ljava/nio/CharBuffer).
The mystery is, that my settings worked fine on Ubuntu 18.04 but no longer on 20.04. Now I have to set JAVA_HOME explicitly to point to java-11 JRE in the shell I use for building darktable.
