I see that you seem to be using the darktable build from Pascal de Bruijn's Ubuntu PPA (https://launchpad.net/~pmjdebruijn/+archive/ubuntu/darktable-release). That PPA also contains an updated exiv2 package, so maybe contacting him and asking for a version bump might be the easiest way to go. If that is not an option: Just overwriting the older library installed by the system is probably not going to be a good idea. So building and installing libexiv2 to /usr/local and then building darktable from source against it sounds like the way to go.
