(Ideally, even Outlook would talk to it, but I'd be happy with pine or so).

Any standards compliant mailer shouldn't have any trouble. See also the uw-imap package which includes both imap and ipop. That with inetutils and setting up inetd should get you set up OK.


(Of course running a mail server requires a static IP...)
