Look at the e-mail header from any e-mail you recieve from a Cygwin mailing list, and you should see a 'List-Unsubscribe:' header, which contains the address you can use to unsubscribe yourself via e-mail. Also, look at <http://sources.redhat.com/lists.html#unsubscribe-simple>.
