There was another one I've used - a command line only one, and the only way you could stop it was to use Task Manager to kill it. I think it was TinyWeb - yes, here it is: http://www.ritlabs.com/en/products/tinyweb/
Very lightweight (53KB!!!), supports CGI, configured only via command line parameters. That's a nice list, but that and Apache2Triad are the only two I've actually worked with.
