In principle yes, and in practice at least there was code for them in
the repo before - but I don't know what the current situation is...

Since VIA stopped their x86 CPU efforts the number of people working
on support for VIA hardware in coreboot shrunk.

If the mainboard is actually supported (it might be, I'm not sure)
then the process is the same as for all mainboards:

* set up an environment where you can recover from a non-functional firmware
  (this involves being able to reprogram the boot flash independently of the
  mainboard itself)

* make a backup of the factory bios

* verify that the backup is correct

* build or download a coreboot image you want to test

* keep fingers crossed while rebooting

usually this is followed by:

* debug, rebuild, then test again

It has been done on a few, but nothing recent AFAIK. Also, Apple is
quite determined to lock users out of their hardware, so this is a
really unneccessary uphill endeavor, especially because they're just
another Intel based system.
