### What problem does this PR solve?
Issue Number: N/A
Related PR: N/A
Problem Summary:
Doris uses Paimon 1.4.2 for its FE connector and BE JNI scanner. Upgrade the
shared `paimon.version` to 2.0.0 so both sides continue to serialize tables,
splits, and commit messages with the same SDK.
Adapt the existing test fixtures to Paimon 2.0.0's branch API, Snapshot
operation parameter, scan overload, and grouped format-file splits. Preserve
the empty-file-before-live-file limit test by explicitly keeping separate
splits. Update integer aggregation tests to verify Paimon's new
checked-overflow behavior. Keep the existing Rust reader eligibility rules and
common/S3 compatibility patches.
### Release note
Upgrade the Paimon Java SDK from 1.4.2 to 2.0.0. Integer `sum` and `product`
aggregation now report overflow instead of returning wrapped values, following
Paimon 2.0.0 behavior.
### Check List (For Author)
- Test
- [ ] Regression test
- [x] Unit Test
- [x] Manual test (add detailed scripts or steps below)
- [ ] No need to test or manual test. Explain why:
- Ran `run-fe-ut.sh` with a temporary Paimon-only module scope; restored
the script afterward. FE connector: 836 passed, 1 live-connectivity test
skipped. BE scanner: 144 passed.
- Maven validate/Checkstyle passed for the Paimon modules and their
dependencies.
- Verified that the FE and BE test classpaths use Paimon SDK 2.0.0.
Verified that the S3 shade removes outer multi-release classes while retaining
all 1,227 embedded multi-release classes.
- The standard `build.sh --fe --be-java-extensions -j 8` build was blocked
before Java compilation by missing LLVM 20 in the local third-party
environment. External-cluster regression tests were not run.
- Behavior changed:
- [ ] No.
- [x] Yes. Uses Paimon 2.0.0 SDK behavior, including checked integer
aggregation overflow.
- Does this need documentation?
- [x] No.
- [ ] Yes.
